The ingredients that I use for my recipes apart from being vegan are chosen keeping in mind the diabetic individual as well.
I remember going to an Indian restaurant where they had prepared a sabji (vegetable dish) with white radish and it was really nice. I wanted to make that dish with my own additions and give it more uniqueness by adding fresh fenugreek leaves that bring their own aromatic flavor. So let's get down to it.
2 medium sized radishes
1/4 large red onion
Small bunch fresh fenugreek leaves (handful)
2 small tomatoes
1/2 tsp mustard seeds
1/2 tsp turmeric powder
1 tsp mustard oil
1 tsp olive oil
1 tsp red chilli powder
Salt to taste
1 1/4 cups of water added at intervals to help the cooking process

Clean the radish by removing the leaves on top and all the dirt. Cut them into small cubes, 1/2 an inch size. Set aside. Do the same with the onion and tomatoes. Also chop a handful of fresh fenugreek leaves into fine pieces.
Heat a large pan with both the regular oil and mustard oil. Mustard oil brings a nice nutty taste. Once the oil is hot, add the mustard seeds and wait until they start popping.
Add the onion, fenugreek leaves, turmeric powder, and red chili powder. Stir on medium heat till the onions become translucent. Add the tomatoes and continue to stir for a few more minutes. Now add the radish and mix everything well.
Continue to cook, adding 1/4 cup of water at regular intervals to help the cooking process.
When done, the sabji should be semi liquid in consistency.
Serve hot with whole wheat chapatis/tortillas.
