Biography

Being a diabetic, the quest has always been to find a diet that not only lets you enjoy your food to your content, but also be able to indulge in your cravings without worrying about your sugar level, not to mention obesity in my case.

After trying various different types of diets that worked initally and then fizzled out, I have finally found the answer in this book written by Dr. Neil Barnard: "Dr. Neal Barnard's Program for Reversing Diabetes: The Scientifically Proven System for Reversing Diabetes without Drugs".

How do you do this?
1) avoid diary and meat products (convert to vegan)
2) use minimal oil, and
3) eat foods that are low in the glycemic index (food that takes a while to convert into sugar in your blood stream).

And above all, eat as much as you want.

The essence of the book is that by following this low fat vegan diet, you start to improve your body's insulin sensitivity and cut your sugar levels. I dont think I should go more into this, and let you read the book for yourself.

Since I have started following this diet, I decided to maintain all the recipes for this diet in this blog. These recipes are great for diabetics, vegan, and everyone else. If you are not a vegan or a diabetic, you can easily replace those substitutes in the recipes and make yourself a wonderful dish.

My other blog is http://www.bigsrisfood.com where I focus on Italian, Indian and Mediterranean food and cook all kinds of food, non vegetarian included. Only difference is my friends eat them :-).

The aim of the site will be to be as creative as possible with this diet, keeping within its guidlines and maintain the sugar in that desirable band we all seek at all times - 80 to 120 mg/dl.

I love sweets and all kinds of desserts and will be preparing those as well, since I know how much of a challenge it is for vegans and diabetics alike to indulge in these kinds of food that we crave for but are traditionally prepared with sugar and diary products.
